To switch on the UV mode, you need to first unlock it in the tech tree. If a production building is built on top of a habitat, it will produce food or energy infinitely (without the use of a marine stabiliser), unless you delete those buildings which will cause the habitat to deplete immediately. You can mitigate this by building a marine stabiliser near the habitat which will replenish any of the gathered wildlife.
If you choose to dedicate a habitat for gathering and build a fauna trap on it, it will eventually be completely depleted of fauna.
